Butter Baked Goods

Anyone who knows me can attest that I’m typically not enamoured by pastel colours or anything conventionally pretty or frilly. I’m not a candy canes and butterflies type of girl. Far from it. When I first encountered Butter’s marshmallows and sandwich cookies at my local Whole Foods, I didn’t give them more than a fleeting glance. With their muted palette of light pinks, greens and blues and their pristine bows, Butter’s products pretty much represented everything that I am not, in baked goods form. When months later I was encouraged to try one of these perfect looking marshmallow cubes by my boyfriend’s mother, an ardent Butter supporter, I gave in and took a bite. This was a life changing experience. I had no idea that marshmallows could be so much more than the bagged white variety I had memories of roasting at summer camp. Butter’s version is significantly more refined, with subtle flavours and a perfect consistency that somehow manages to be both gooey and fluffy without being sticky. Mint is my favourite but you really can’t go wrong with any of their many flavours. After realizing the error of my judgmental ways I decided to make the trek out to Dunbar to visit the brick and mortar Butter bakery. The décor is a room-sized manifestation of Butter’s packaging – floral, pastel, and immaculate. I bypassed the large selection of cakes, pies and scones and made a beeline for the sandwich cookies – giant homemade cookies with creamy centers. The peanut butter sandwich – two peanut butter cookies with a delectable sweet peanut butter filling – is my absolute favourite. I’m thankful that I don’t live close to Butter because I’m fairly certain that I wouldn’t be able to resist indulging in these everyday. (SR)
