Reflections at Georgia Hotel

I’m a huge Pimm’s fan, having first had this classic English summer cocktail on the banks of the Thames, so I was thrilled to find this on Reflections’ menu this summer. According to their menu, this cocktail was first created in 1840 (!) – spicy and flavoured with chunks of citrus, cucumber and mint, it’s super refreshing and dangerously doesn’t taste at all like alcohol. On the fourth floor of the Georgia Hotel, Reflections’ patio is a concrete oasis forming the inner courtyard of the hotel and a welcome patio in the heart of the city. Their cocktail menu is creative and their wine list focuses on boutique BC wines, with French and Californian additions. I’m hoping the greenery planted around the perimeter has filled in a bit by next summer because the space is a little cold for me with the metal and glass structure resembling a bus shelter, but the teak lounge chairs, fire pit and water features help create a relaxed, hidden retreat – and the best part is that it’s right downtown.
